Evolution Edition from the reproduction of Yashio Orezake, the history of brewing in the brewery is engraved and repeated re-brewing.

Folded sake, also known as "Kimoto" or "Yamahai" style, is a traditional and labor-intensive sake-making method. It involves a longer fermentation process that results in a richer and more complex flavour profile.

Tasting Notes: Richly kneaded caramel-like scent and rich taste.
