Iio Jozo, Premium Rice Vinegar, 1.8l
飯尾醸造 富士酢 プレミアム 1.8l

The ultimate rice vinegar. Made by centuries of refinement. Iio Jozo used to be a sake producer who owned rice paddies.

Iio Jozo uses a traditional method of vinegar production that involves fermenting rice in cedar barrels for an extended period of time, which gives the vinegar a mellow and rich flavour. The vinegar is made from high-quality rice and pure spring water from the local mountains!

This is used by our most prestigious clients and some of the best restaurants in Japan.

Iio Jozo is committed to using traditional methods of production and high-quality ingredients to create their rice vinegars. They are also environmentally conscious and use solar panels to generate a portion of their energy.

Did you Know?
Iio Jozo have bred their own unique strain of rice, perfect for making into vinegar. To the vinegar mash they use 5-9 times the regular amount of rice to get a smooth clear flavour of rice and not just acidity!
