A unique and balanced vinegar traditionally used as a marinade for many Japanese dishes. “San bai” actually means “3 cups” which is are reference to the measurement ratios of dashi, rice vinegar and mirin used when making with it. In western fine dining it has been used to season many dishes from raw seafood to adding depth and acidity to sauces. 

A type of Japanese vinegar-based sauce made from rice vinegar, soy sauce, and mirin (sweet rice wine). A balanced flavour profile of sourness, sweetness, and saltiness, which makes it a versatile condiment that can also be used in marinades, dressings, and stir-fries as well as a dipping sauce for sushi, sashimi, and other seafood dishes!
