This vinegar is made from rice that has been polished like in the sake brewing process which gives it a clearer, sweeter and richer taste when compared with other rice vinegar. Ideal for use with sushi rice when blending with akasu and dashi.
Kisaichi Ginjo rice vinegar is a kind of rice vinegar with alcohol added using the surface fermentation method. It's good for blending into seasonings, because it has less rice-specific smell and very mild acidity.
It goes very well with Maguro-akami (deep red tuna sashimi), Zuke-maguro (Marinated tuna), Tai (Sea bream), Kohada (Medium gizzard shad), Hirame (Flounder), Ika (Squid) and many more things too.
