Battera kombu is a very thin kombu often used when making Mackerel sushi. Its made through an intricate process whereby dried kombu is first marinated in vinegar and then sliced incredibly thinly without any holes by only the most skilled profettionals.
To use Battera kombu for yourself :
-First boil the kombu with a sweet vinegar to a measurement of: 2 parts vinegar, 3 pars water to 1 part sugar.
-Once boiled, leave to cool ans then it is ready for use on sushi or even to wrap sashimi with it.
