White soy sauce is almost exclusively made from wheat and does not contain much soy beans. (Usually made from around 80-90% wheat.) It is known for being used in expensive restaurants like "Ryotei". The wheat and the soy beans that are used for this products are carefully selected and gives rich sweet flavour to this white soy sauce.
Yamashin White Soy Sauce is often used as a seasoning for raw or lightly cooked dishes, such as sashimi, salads, and tofu. It is also a popular ingredient in Japanese cuisine, such as sushi, noodle dishes, and grilled meats!
How is it made?
The production process for Yamashin White Soy Sauce involves a unique method of fermentation and ageing. The soy sauce is produced using koji mould, which is a type of fungus that is used to ferment the soybeans and wheat. The mixture is then placed into large wooden barrels and left to age for up to a year, which gives it a unique flavour and aroma.
Unique qualities of white soy sauce: light colour, sweet and has a milder, delicate flavour. Unlike traditional soy sauce, which is dark in colour and has a strong, salty flavour.
