Higashi-Maru Light Soy Sauce (Premium) 500ml

Light soy sauce is also known as "usukuchi shoyu" in Japanese.

This is Higashimaru's premium version of their famous light soy, known as marudaizu shoyu (whole bean soy sauce) as it made with whole soy beans rather than dried defatted soybeans like the regular grade usukuchi shoyu and other lesser soys. Think of it as fresh orange vs orange made from concentrate.

It is particularly popular in the Kansai region of Japan (places like Osaka, Kyoto, Kobe), the lighter colour arises from the use of amazake, a sweet liquid made from fermented rice, that is used in its production. Used when a less strong flavour or colour is desired in a dish. It is used less often for dips than dark soy. The amazake is full of koji for that umami sweetness.

Higashi-maru Light Soy Sauce is often used as a dipping sauce for sashimi, sushi, and other raw fish dishes, as well as a seasoning for stir-fry dishes and marinades. It can also be used as a substitute for traditional dark soy sauce in recipes that require a lighter flavour.
