Information

We call this classic dashi as it is the essence of what chefs expect to taste when they think “dashi”. Dashi in Japanese simply means "stock", so it can be many things. But this has that classic smoky bonito, kombu flavour, backed up with sweetness of mirin, the depth of soy sauce.

Perfect as a universal seasoning to add umami to anything. Used by many of our top clients and one of our best sellers.

Versatile and easy to use. Simply dilute the concentrate with water and use it as a base for soups, stews, and other dishes. It can also be used as a seasoning to add flavour to stir-fries, marinades, and dressings.

This is a concentrate and needs diluting by using hot or cold water.

Ratios:

Hot Udon noodles  1:10
Oden                      1:12
Dashi Chazuke       1:13
Japanese Omelet   1:5
Clear Soup             1:14
