Aoi dried soba noodles are a type of Japanese noodle made from buckwheat flour, wheat flour, and water. They are named after the Aoi region in Japan, which is known for producing high-quality soba noodles. 

The noodles are made using a traditional method that has been used for centuries. One of the key characteristics of Aoi dried soba noodles is their texture: They are known for their nutty, earthy flavour and slightly chewy texture. 

Soba noodles are made from buckwheat flour which gives them the brown colour. In summer, they are served cold on a zaru soba tray and accompanied by a sauce called soba tsuyu. The noodles are dipped into the sauce rather than being put into the sauce. They can also be served hot with a variety of toppings such as fried tofu called abura-age.

Commonly used in a variety of Japanese dishes, such as soba soup, cold soba noodles with dipping sauce, and soba stir-fry. They are often served with a dipping sauce made from dashi (a stock made from dried fish flakes and seaweed), soy sauce, and mirin (a sweet rice wine). The dipping sauce may also be flavoured with green onions, wasabi, or grated ginger.
