Umeshu is the easiest way into Japanese drinking, and this is the version worth starting on. Most umeshu is diluted down to an easy 11 or 12 percent. Hakutsuru's Genshu is not — genshu means undiluted, and it is bottled at full strength, so the ume fruit arrives concentrated rather than watered into squash.
It comes with a pair of cut-glass ochoko, the small Japanese cups that make a 20ml pour feel deliberate rather than mean. Serve it cold, straight, or over a single large piece of ice.
