How to Make Ice Cream Mochi

Mochi make a wonderful treat; the sticky, sweet glutenous rice balls are often filled with anko or chocolate, but on those special occasions where you're looking for something even more decadent, you should try filling your mochi with ice cream! 

Although ice cream mochi are often considered a summertime treat, you can imbue them with sweet, festive flavours to make them a special pudding to cheer you up as the nights get longer and darker! 

For this recipe, we'll be using read-made ice cream (because life's too short) but we will be teaching you some great flavour combinations, and how to add flavour to your mochi dough. However, first thing is first, let's get the basic mochi recipe mastered. 

Basic Mochi Dough

You will Need

  • 115g Mochiko Flour
  • 180ml of Water
  • 1/4 Cup of Sugar
  • 1/2 Cup of Corn Flour

Method

  • Whisk together the dry ingredients, then add the water and whip up into a paste.
  • Cover the bowl of ingredients lightly with a piece of cling film, then place in the microwave. Cook at a high heat for about 1 minute. 
  • Remove from the microwave then mix with a dampened rubber spatula. 
  • Recover, and cook for a further 30 minutes. The dough should become quite translucent.

This is the basic method for mochi dough, but now you will need to decide your flavourings! To flavour the mochi dough, just add a capful or two of good quality essence or syrup to the mochi dough.

  • Orange Mochi with Chocolate Ice Cream
  • Vanilla Mochi with Strawberry Ice Cream
  • Matcha Mochi with Sesame Ice Cream
  • Almond Mochi with Cherry Ice Cream
  • Rose Mochi with Raspberry Ice Cream
  • Hazelnut Mochi with Caramel Ice Cream

Of course, the falvour combinations are as endless as your imagination!

To fill the mochi with Ice Cream, here is the method:

  • Take a muffin tin and line each hole with a muffin case. 
  • Using an ice cream scoop, make spheres of ice cream and place each one in the muffin case.
  • Freeze the ice cream spheres until you have made the mochi dough.
  • Take your mochi dough as made above, and scatter the corn flour across a counter. Roll the dough on the corn flour to help stop it sticking.
  • Roll your dough out into a large sheet, remove the ice cream from the freezer, and proceed to cut out circles of dough, and wrap them around the ice cream spheres.
  • Store in the freezer when done and enjoy!
