After beginning his career working in restaurants around the world, Simon Martin opened modern British restaurant Mana in October 2018 in Manchester. With the mission to champion what’s in our British waters, Simon has injected Japanese methodology and ideology into his 12-16 course set menu. Sushi Stu caught up with Simon to discuss inspiration, the importance of local produce and what SushiSushi ingredients are a part of the Mana kitchen.

Mana is the first restaurant in Manchester to win a coveted Michelin Star since 1977.
