Have you ever tried dashi vinegar before? Shimanto Domeki, is a company that specialises making dashi products. Shimanto is a place on Shikoku island Japan, known for the big river also named Shimanto.
Shimanto Domeki is based in Shimanto and they produce products that people would be interested in order to bring in tourism to the area. They are quite original as most Japanese food companies are hundreds of years old, Shimanto Domeki is established in 2015. As they are a new company, they produce the products that old companies would never think of.
They have produced drip dashi which is similar to drip coffee. They also sell dashi powder dressing. Their products are very original.

The vinegar that they use is a special blend of "Kuni no homare" - a vinegar that has been brewed for 165 years. Also, the bonito they use for the products are Aki-majika.
