Shiitakae Dashi is a really simple stock to make. Just follow these easy steps and you're on your way to 1L of true shiitake stock.

Method

  1. First of all you need to put the mushrooms in a saucepan with 1 litre of cold water (filtered if possible) and leave to soak for 8 hours.
  2. Once they have soaked you need to place the pan over a high heat and bring the liquid almost to boil, then turn off the heat and remove the mushrooms.

That's it! If you want to use the mushrooms in recipes that require rehydrated mushrooms then feel free to do so but other than that your dashi is now ready to use in individual recipes!
