Amabuki Tsurubara and Abelia Yeast Honjozo is a type of sake produced by the Amabuki Sake Brewery, known for their unique approach to sake-making. This particular sake combines the use of Tsurubara rice and Abelia yeast to create a distinctive flavor profile.

Tsurubara rice is a locally grown rice variety in Saga Prefecture, Japan, where the Amabuki brewery is located. The use of Tsurubara rice contributes to the character of the sake, as different rice varieties can impart different flavors and textures.

Abelia yeast is a special yeast strain used during the fermentation process. The yeast selection is an essential factor in sake production, as it greatly influences the aroma and flavour of the final product. The use of Abelia yeast adds complexity and unique characteristics to the sake.
