Celebrate Easter and Spring With Chirashizushi

Chirashizushi (Chirashi-sushi) is known as ‘scattered’ sushi, served on plates or bowls with colourful toppings for special occasions. On Chirashizushi, seafood and vegetables are spread over sushi rice, and those toppings have meaning. People believe that those toppings bring you good luck and happiness during spring.

・Prawns bring good health and long life. The curve of the prawn symbolises old age as good posture starts to deteriorate during the later years of life.

・Lotus root bring a bright future. It is said that you should be able to see your future through the hole of the lotus root.

・Beans bring you success at work. The beans give you focus and energy to complete arduous small tasks, symbolised by the size of the bean.

This cheerful sushi is easy to make and suitable to celebrate Easter holidays! Here is the recipe for it:

                    ・2 Japanese sushi rice cups (360ml) 

                       ・1 packet of Chirashizushi mix, or you can also use 3 tbs (45ml) of Sushi vinegar.

You can put any toppings you want.

                       ・Shredded egg crepe                       

                       ・Prawns 

                       ・Lotus root

                       ・Beans

                       ・Ikura (salmon caviar)

                       ・Shitake mushroom

                       ・Shredded Nori sheet 

Mix rice and sushi vinegar well (if you cool the rice with a fan the rice will be shinier),boil the prawns, and if you put shiitake and lotus root, they are better to marinated in mirin for a bit so they taste nicer. Put all the toppings on top and done! Easy!
