What Is Ponzu? Japan's Citrus Dipping Sauce Explained

Ponzu (ポン酢) is Japan's citrus dipping sauce: sharp, fragrant and lighter than soy sauce, splashed over hotpots, sashimi, grilled fish and chilled tofu. The best-known version is yuzu ponzu, and its home is Kōchi on the island of Shikoku.
This guide explains what ponzu is, how it differs from ponzu shōyu, the story of Kōchi's yuzu ponzu, and how to use it. It sits inside our Pantry Masterclass.
Our own yuzu ponzu: Kōmi Premium Yuzu Ponzu, 300ml and 1L, made for us by a family that has brewed soy for eighteen generations. Pre-order: due in the UK in mid-January 2027. In stock now: Shibanuma Classic Yuzu Ponzu, 300ml.
What Is Ponzu?
Japan's Ministry of Agriculture (MAFF) draws a clear line. Ponzu proper is citrus juice mixed with vinegar. What most people buy as ponzu is ponzu shōyu (ポン酢しょうゆ): ponzu with dashi from kombu and katsuobushi, soy sauce, yuzu juice and mirin added. Yuzu ponzu, in MAFF's words, is vinegar with yuzu juice added.
The citrus sets the character. A MAFF recipe tip notes that lemon gives ponzu a clean finish, while yuzu makes it rounder.

Kōchi's Yuzu Ponzu
In Kōchi, yuzu ponzu is in every kitchen. MAFF names it Japan's top yuzu grower, and the wet Chūgei district in the east suits the yuzu tree, which dislikes drought. The fruit is harvested around November.
Tosa, the old name for Kōchi, has a long su-mikan culture of using sour citrus with food: more than 40 kinds, including yuzu, bushukan, naoshichi, daidai and sudachi, each matched to the fish of its season.

How Yuzu Ponzu Became a Product
Yuzu ponzu as a product began with a problem. MAFF records that around 1965 the mountain villages of Umaji, Kitagawa and Aki turned from forestry to growing yuzu. With part-time and ageing farmers, it was hard to sell good-looking fresh fruit, so they began selling it as ponzu instead. Ponzu made at home became a commercial product around 1986. Monobe yuzu from Kami, Kōchi, was given Japan's Geographical Indication mark in 2020.

How to Use Ponzu
MAFF lists the classic uses in Kōchi:
- Hotpots. The dip for mizutaki chicken hotpot and chirinabe fish hotpot.
- Tofu. Over yudōfu, simmered tofu, or hiyayakko, chilled tofu.
- Fish. With sashimi and grilled fish.
It also makes a quick dressing. MAFF's Kōchi recipe: mix 3 tablespoons of yuzu ponzu with 1 tablespoon of ground sesame, 1 teaspoon of sugar and ½ teaspoon of soy sauce, then whisk in 1 tablespoon of sesame oil a little at a time.
Add ponzu at the end of cooking or at the table: the yuzu aroma fades with long heat.

Frequently Asked Questions
What is ponzu made of?
Ponzu proper is citrus juice and vinegar. Ponzu shōyu, the usual bottled kind, adds soy sauce, dashi and mirin.
Is ponzu the same as soy sauce?
No. Ponzu shōyu contains soy sauce, but the citrus and vinegar make it sharper and lighter.
Which citrus is best for ponzu?
Yuzu is the classic; it gives a rounder ponzu than lemon. Other sour citrus, such as sudachi, are also used with food in Japan.
What do you eat ponzu with?
Hotpots such as mizutaki, tofu, sashimi, grilled fish, gyoza and seared beef.
Is ponzu vegetarian?
Usually not, because ponzu shōyu is made with dashi that includes katsuobushi. Ours contains bonito; check the pack.
